Ginger Pineapple — Here’s Tom's straight up teriyaki sauce! Fresh garlic and ginger, ripe pineapple, toasted sesame and soy—all wonderfully balanced. 

GINGER PINEAPPLE CHICKEN TERIYAKI
Serves 4

Serve with steamed rice and bok choy for a quick, satisfying weeknight dinner.

4 chicken breasts or thighs
vegetable oil, as needed for brushing
Tom Douglas Seattle Kitchen Ginger Pineapple Teriyaki Sauce
Steamed white rice, if desired 

Fire up the grill or preheat the broiler. Brush the chicken pieces lightly on both sides with oil. Grill over medium heat, or broil, on both sides, turning as needed until cooked through, about 20 to 25 minutes. (An instant reading meat thermometer inserted into the thickest part of the meat should read 165ºF.) About 2 minutes before the chicken is done, brush each breast with teriyaki sauce. Serve the chicken and rice with a bowl of teriyaki sauce on the side.
